Different sauces for different foods

In the center of the hot sauce spectrum are the big players, the brands that have been the torchbearers for the category. They have names you know like tabasco, cholula, frank’s red hot, crystal… the sauces you've seen in refrigerator doors for decades. But using them for everything doesn't take into account the different foods, different flavors, the different cuisines that you cook. I mean, you don't make chicken wings or tacos seven nights a week, do you?

At one end of center are boring, unimaginative sauces we’ve all seen before, in flavors like mango-habanero for example (which was innovative in 1995). These sauces offer nothing in the way of generating any excitement, rather they perpetuate the rhythm of lunches and dinners that are the same old thing, a flavor rut without an end in sight.

At the other end are what I’ll call the incendiaries, the kind of sauces that use the hottest chilies on the planet, making eating them almost like a contest to see if you’re tough enough to take it. These peppers have names like Carolina Reaper (the world’s hottest), ghost peppers, scorpion peppers... These sauces are so hot as to overwhelm the taste of whatever they’re being used on. 

In my opinion, there is plenty of room for new players to fill holes in the market, sauces that bring in innovative flavors and accent and complement foods without overwhelming their flavors.
